Oh boy, I'am drooling all over my keyboard! These last pictures are more delectables even if it is possible. As I am lactose intolerant, I know that old cheeses have very little or no lactose. That five year Gouda looks just perfect. What did you put in the plate with it?

On the plate with the Gouda are whipped honey and butterscotch toffees. The cheese taste a lot like both.
On the plate with the Joseph is a fig & walnut jam.
Unless your are EXTREMELY intolerant or allergic to casein, most cheeses should be OK accept for soft and fresh cheeses. Lactose gets eaten up as part of the process. Of course, try with caution.

If you like goat cheese you'll like this. And being from France- I suspect much easier to find younger in your neck of the woods than here.
