I took back the sigma 70-200 f2.8 and picked up the canon 100-400L.

Having a lens like that does create good bokeh.
Just watch the hyperfocal distances to keep the items you want in sharp focus, yet still throw out the background. Close ups are never easy to handle in this respect due to the small DoF.
