Hello all 
I have finally bought the Epson R3000 and - at the same time - I have bought Hahnemuhle's A4 and A3 papers.
I have some problems installing the printer but I hope to be able to solve them soon. After all, it is very simple but I am a lurk on these small things I do once every 4/5 years or so 
Soon, I will be able to give you some feed back on my impressions about this printer and their results.

Antonio: lets do one thing at a time, step 1 correct, step 2 correct, step your need to highlight Velvet, with your paper was a sheet and someplace on it, it states that stock is velvet (if using Epson you would see a list of Espon, as this is a non Epson stock Hahnemuhle tell that it is the same as velvet for this. So again just highlight velvet.
Will look further but you should be good to go. Start with this to see what happens.

Antonio: do not worry, your step 1 correct, step 2 correct, step 3 as the paper is a fine art paper the it is the same as if the printer were printing on Epson Velvet, so highlight velvet. When you downloaded the ICC profiles from Hahnemuhle, there was also a PDF it would have told you the this setting on the printer for this stock is velvet. You see other stocks but they are Epson stocks. Your step 2 is the one that tells the system the ICC of the stock, step 3 it the type of stock.
Ok second problem the first setup is printing through Photoshop, the Red River print setup example is as if your were printing through windows. As they say in New York "forrrgetta aaabout it".
Been there, done that, have no hair to prove it.

Allan thank you for dropping these infos for me.
Since you told me that Hahnemuhle should have a pdf file to read I went to it and re-read it.
Now, I am absolutely sure that the driver I have installed is not correct. I should see another dialogue box not the one I am seing now.
Just have a look at their dialogue box (from his pdf file)
OK I know it is in German but it is not the right box the one I have now !
So, to begin with, what I have to do is: install the proper drivers for this printer.
Something else Allan that I do not understand:
If I am paying 2,19 € (2.69US$ today's rate) / Hahnemuhle A4 sheet of paper why should I use/choose an Epson paper instead ? And Hahnemuhle is offering me the correct icc profile for the printer/paper combination...
I want to get everything linear. Everything straight, the way it should be.
As you may understand I have not invested in an expensive printer and expensive paper to play with but to do something more serious. Not to mention the calibrator device...
Hahnemuhle gives the right paper profiles for this printer and I am going to get the hole thing working the way it should.
Thank you again for the lines you have written to me. They were useful and made me investigate a bit more.
I must get to it. And I will...

Antonio: no problem, you should have been me, with my 4900, as for the Hahnemuhle that is a general overall of the print driver. Rendering, you want relative colorimetic, black point check yes, it says that the paper you have is if is Epson's Ultra Premium Photo paper Luster. My mistake was thinking velvet, so in media type find what Hahnemuhle says it is which is the above Epson Premium Photo Paper Luster.
As to your "Something else", it is a Epson printer, they load all the information (ICC's, media type,etc.)in the printer for their papers. So when you went to Hahnemuhle they asked which make of printer (Epson) and you downloaded the ICC's and installed them. Then the print out (PDF) tells you what their media type is which is the Luster. Now I do not know that printer but have worked with the 3880 and my 4900 with mine I have to tell the printer by going to the printers menu on the printer itself and tell is also the media type if not it will not print if both do not match. That said I think that is not the case with yours.
It takes a little time to get use to these printer as they are higher end printers, not the ones that just plug in and print where the only things you tell is it plain or photo and colour or greyscale. The higher end you go the more setting and info that you need to input, however the images printed reflect the quality that you now want.
Will check back in a few minutes to see how it is going.

Monday morning I will call Epson Portugal and ask for some help.
I will overcome this problem. I must !! 
When the problem(s) is(are) solved I will post here the final results.

You know Allan, I bought Hahnemuhle paper in Portugal and they were so "great" that they sent me samples of various paper types from Hahnemuhle and Canson. Imagine the work I am going to have to test all these papers with the appropriate icc profiles.
