One photo should be fine, but it does depend on the quality and pixel dimensions of that one photo.

Basically you can go as big as you like with any photo -- what varies is the viewing distance at which you're able to notice the lack of information.

What are the pixel dimensions of the file you had in mind?

Image sharpening also has a big effect on quality of the finished item.

The canvas surface also has a structure of its own which will "break up" the finest details. You will be looking at it the way you admire a painting - not close up. I have made canvas prints your size from 3-4 Mp files which turned out beautiful.

Ali, I just ordered a print on canvas today that will be 24" x 36". This was
my first time having a print of this size done, but the printer feels it will be
fine. Maybe just first time jitters, as the image file size was 4288 x 2848
(14.3MB). (Colin this is where you chime in with a "you'll be fine, no
    worries at all" comment...)

Check back on Sat., (and wish me luck!), as I pick up the print at 10:00, and
will be meeting my client at the framers 30 min. later...

Seriously, you will. File size is just fine. Just remember that the correct viewing distance ISN'T from the length of your nose away ...

The advantage of a canvas print is that you will get some natural diffusion just because of the nature of material being used. You do have to stand back a few feet to see the whole thing.

Unfortunately, the pixel peepers seem to have convinced much of the world that we have to examine prints with a magnifying glass. As Colin rightly points out, you really don't want nose prints all over your nice new image...

I regularly print 19" x 22" images from a 12 MP camera and the IQ is great, so long as the image I use is sharp.
