Edit -> Preferences -> Performance. I have mine set to 1000.

now set to 101 (it was only 20!) which hopefully will be enough, though I have a feeling that I may need all of that for a project I have to do for a course this week.

I got the brand new Elements 10 over the weekend and I can highly recommend it, I think it would be very suitable for your needs and purposes.
