I was adjusting colours in value instead of RGB. Better now?

There is a lot of technical jargon in this thread that means little to me (I simply adjust sliders and numbers until an image looks right to me!), and it seems that the terms used can be different depending on the software used. So, without getting too technical, please can you describe the difference between "clipped" and "over-saturation"?
