There are only two situations in which my wife and I don't check the histogram after every release of the shutter. One is when a series of bursts is being made for an action shot and the other is when the subjects are unpredictable (such as animals) or impatient (such as people). Even in those cases, we get a histogram reading of the scene before taking the "real" shots.
By the way, if you review the histogram of my last photo, it will indicate that the red channel is seriously blown. However, that was a result of post-processing, as the histogram of the capture is not so blown. While post-processing, I keep an eye on the histogram and another indicator of blown highlights. In the end, though, I rely more on how the image looks in the case such as this one when the histogram is not theoretically ideal.
