1) As an aid to visualize B&W compositions, shoot RAW and set your camera to a monochrome mode. The image you get may not be optimum B&W, but should give you some rough idea as to how the capture would work in that format.

2) Since you shot RAW, you can then take the captured image, convert it back to color and make any adjustments (WB, exposure) you deem necessary in ViewNX.

3) In your favorite editor (PSPX2 for me) perform a filtered B&W conversion

4) Perform any edits you deem necessary on the image (contrast, sharpness) -- though I haven't decided if it's better to do these before or after conversion.
